About Hinokiについて
Housed in a beautifully restored Meiji-era building constructed all-hinoki cypress, Hinoki has been reimagined as a refined dining destination. We offer Teppanyaki and Sukiyaki that make the most of local ingredients, providing you with an experience that blends history and modernity.
Masterful Cuisine
Showcasing the Finest
Local Ingredients
Signature dishes feature locally sourced Shinshu Premium Wagyu, complemented by Koshihikari rice and an array of fresh seasonal vegetables. Expertly prepared on the teppan grill, each ingredient is brought to its fullest expression, delighting both the eyes and the palate.
The restaurant also pays tribute to a beloved culinary tradition: Sukiyaki, a favorite among celebrated writers and literary figures who gathered here after rounds of golf in the 1950s.
A Timeless Setting
Inspired by
the Spirit of Karuizawa
Preserving the beauty of its original Meiji-era all-hinoki cypress architecture, Hinoki blends historic character with modern refinement. The warmth of natural wood and the open ambiance evoke a place where generations of intellectuals, artists, and cultural figures have gathered.
Through the windows, guests can admire Karuizawa's ever-changing four seasons. You can experience the unique charm of Karuizawa in every dish.
